Bi Skaarup

Bi Skaarup (born September 9, 1952 in Copenhagen , † March 15, 2014 in Nørre Alslev ) was a Danish historian and is considered a leader in the field of Danish food history.

Skaarup studied at the Aarhus Universitet medieval archeology with an emphasis in the medieval food culture. Her thesis was entitled Køkkenfunktioner, køkkener og køkkentøj i det senmiddelalderlige Danmark (approx. 1400 - approx. 1600) . In 1985, a year after graduating, she was hired as a curator at the Copenhagen City Museum , which she stayed until 2006. Her area of ​​responsibility included the archeology of the city and the time of the city's development up to the 17th century. She also worked as an expert on food culture, B. 1995/96 as head of the Danish part of the Euroterroir project . In 2006, she and her husband, the historian Louis Hausballe, founded De Arte Coquinaria on their farm Elysium in Nørre Alslev on Falster . The company offers scientific advice on historical Danish food culture and has, for example, helped Claus Meyer with the writing of two of his books. Since 2012 she has been President of the Danske Gastronomiske Akademi . Various contributions to Gastronomisk Leksikon , published in 2010, were written by Skaarup.
