Panela (also known by the names raspadura , rapadura , atado dulce , tapa de dulce , chancaca , empanizao , papelón , piloncillo or panocha ) is a Latin American food that is obtained by boiling sugar cane juice at high temperatures. The resulting viscous molasses is poured into cuboid molds and dried. Panel consists u. a. made from sucrose and fructose and contains calcium , iron , phosphorus and ascorbic acid .

There is a similar food in India and Pakistan called gur or jaggery .
