Goat meat is the meat of the domestic goat . That of the young animals is called fawn meat . It is an integral part of Indian and Southern European cuisine as well as the cuisines of the Middle East , a specialty in Europe.

Goat meat has historically been a welcome alternative to beef or pork among poor sections of the population and in areas with poor soil fertility , such as mountains. The frugal domestic goat with its meat was known as the “ little man's cow ”, and not just because of the milk . Goat meat is low in fat.

Depending on the age of the goat, a distinction is made between milk kids (up to 6 months) and young goats (up to 12 months). The age of the slaughtered animal can be recognized by the color of the meat. It is light pink in young animals and dark red in older animals.

In Germany, Austria and Switzerland, the meat of kid goats was traditionally considered an Easter dish, called Gitzi in Switzerland . The variations of the preparation are very diverse. In many areas of Franconia , goat meat is a festival roast at Kirchweih (buck roast). In Portuguese cuisine , cabrito asado ( roast kid ) is a very popular dish, with the animal used being around a month old. In Asia, the Philippines are known for dishes made with goat meat. In Manila there are even special restaurants for goat dishes. One of the most famous dishes is calderata , a soup .

The meat of adult goats is considered tough and hardly plays a role in European cuisine. That of the billy goat has an unpleasant taste and is not food at all. The castration of animals that are common in other animal species such as B. Sheep is common, was less common in goats. In the dietetics of the Middle Ages and early modern times based on the humoral pathology , goat meat was considered a helpful diet for infertility.

Already in the 18th century the meat of young animals was used almost exclusively. This is what Johann Georg Krünitz says:

“The meat of young goats is a very valued food […] yes, it is not uncommon for lamb to be sold for that of young goats. The female goats are also slaughtered when they are fattened, but their meat is far less valued than that of sheep [...]; The meat of old, not emasculated, goats is so little respected in many areas that even the poorest class of the people disdains it, because it tastes just as peculiar as an old billy goat smells. "

Since the sales of goat milk in Bavaria and Switzerland have increased significantly in recent years, there is an excess of goat meat there.
