The sugar yeasts ( Saccharomyces ) - in the vernacular a little imprecisely usually just called yeasts - form a genus in the department of the ashlar mushrooms . Various Saccharomyces species are of considerable importance to human health, as are the various strains of S. cerevisiae , which are mainly known under the German names baker's yeast or brewer's yeast.

Cultures of Saccharomyces species grow very quickly under ideal conditions and can reach maturity within three days. These yeasts owe their name ( Latin saccharum , sugar ) to their ability to utilize various carbohydrates - especially sugar .

The sugar yeast Saccharomyces boulardii is used as a remedy for diarrhea .
