Akutaq

Akutaq (pronounced agudik ) is the name for a special form of ice cream that is traditionally made by the Eskimos . The word means "mixture". The basis is no milk or juice, but fat from reindeer or moose and seal oil or blubber of whales . The fat is cut into pieces, liquefied by heat and then whipped by hand until frothy. Seal oil and water or freshly fallen snow are added and beaten until the mixture is fairly firm. Then berries are added, for example blueberries or cranberries, and the ice cream mass is put in the cold.

Today sugar is also used in the preparation, as well as raisins or dried fruits and the vegetable fat Crisco .
