Baker flag

A baker's flag is a stick with a (damp) rag on the end, which is used to remove wood and ash residues in wood-burning ovens before the bread gets inside. It also serves to cool the very hot floor, which is inevitably created by firing with wood, before the baking process. In the Rhineland, the baker's flag is also referred to as Weev.
