The Bleu de Gex , also Bleu de Septmoncel or Bleu de Gex called, is a French blue cheese with a mild flavor. It has been under the Appellation d'Origine Contrôlée since 1977 , which ensures the quality of this type of cheese and defines the production conditions.

The cheese is a raw milk cheese made from cow's milk . The cow's milk comes from the Montbéliard cattle breed . The annual production is around 500 tons. Cheese wheels have a diameter of 36 centimeters. They ripen for about a month in cellars with a humidity of 80 percent. During the ripening process, a syringe is used to inject air into the dough to allow the mold to spread inside the cheese.

In its production region, people like to eat the cheese melted into boiled potatoes. There it is also slowly melted in slices in a frying pan and served as a spread.
