The calissons are said to have originated in 1473. The chef of Duke René von Anjou is said to have created it for his wedding. It is said that he wanted to please the future Duchess, because her sad look worried him.

The calissons d'Aix have been a well-known specialty from Aix-en-Provence since the 16th century .
