The Carré de l'Est is a soft cheese made from cow's milk with white mold rind from France . The name means square of the east in German . It is made from pasteurized milk, originally from Lorraine and is always square. This cheese has been legally designated in France since April 2007.

The Carré de l'Est is still quite young for French cheese. It was only developed in the first half of the 20th century with the aim of producing a soft cheese that has a longer shelf life than other cheeses of this type, especially in the summer months.
