Cecina [ θe'θina ] is a dried meat from cattle . Different parts of the beef are used for the production. The meat is successively salted, washed, pre-dried, smoked and dried. The entire manufacturing process takes at least seven months. Cecina is much darker than pork ham, the taste is stronger.

Cecina is a specialty of the province of León in Spain , the Cecina de León is a Protected Geographical Indication (PGI) .
