Danbo cheese

Danbo is a Danish cheese and the most common type of cheese there. It is referred to by the Danish Veterinary and Food Authority as “Denmark's national cheese”.

It is a mild, slightly sour cheese made from cow's milk . Large amounts of water are added during production, creating a smooth, soft cheese suitable for slicing .

Denmark has applied for the protection of the name Danbo under the EU Regulation on Protection of Origin.

In 2011 Danbo's production was 40,100 tons, which is 13% of total Danish cheese production. Danbo is sold under the brand names Klovborg, Riberhus, Lillebror, among others.

history

Danbo was developed by Rasmus Nielsen, who after traveling through East Prussia and the Netherlands developed the cheese at the Kirkeby dairy in Funen at the end of the 19th century . Nielsen did not succeed in convincing the cooperatives to produce a "Russian steppe cheese", which is why he finally leased a dairy himself and produced the cheese.
