Dyrlægens natmad

Dyrlægens natmad (dt. "The vet's supper") is the Danish name for a traditional, cold smörrebröd made from meat. Oscar Davidsen came up with the combination for his regular guest Sigurd Keilgaard, a veterinarian.

For the simplest form of dyrlægens natmad , a slice of wholemeal rye bread is coated with salted butter. This is served with some liver pate and then a few slices of corned beef . The whole thing is decorated with a thin slice of aspic and red onion rings .
