The sheaf knife is a special knife and harvesting tool. Sheaf knives were used to cut open the bound grain sheaves before threshing . They consist of a wide leather strap with steel fittings to which an approximately 6.5 cm long curved steel blade is welded. The fitting, arched like a wrist, was riveted to a leather bracelet. An adjustable buckle fastener was used for secure attachment to the hand or wrist. Simpler models of sheaf knives consist of a (leather) strap that goes around the hand and a curved blade approx. 5–7 cm long. The use of sheaf knives saved labor because the threshers could cut the sheaves, leaving their hands free to grip.
