Schar Tos ( Mongolian шар тос ), also yellow butter, is a clarified butter that is used in Mongolia. Its consistency is comparable to Indian ghee . The starting material for Schar Tos is Öröm , a thick cream that is mainly made from yak milk .

The extreme climate and the greatly reduced food resources in winter limit the keeping of milk-producing pets. House yaks are kept where it is not possible or only to a limited extent to keep domestic cattle . The lactation period is usually short for both. House yaks only give milk for an average of five months. The preservation of the milk is therefore of particular importance.

Manufacturing

Milk is heated and stirred at 80 to 90 ° for a long time. Then let them rest until a layer of cream about two centimeters thick forms. This Öröm is eaten fresh or stored dry. For Schar-Tos production, Öröm is collected in special containers over a longer period of time. A fermentation process begins. The Öröm is then heated for about two hours with constant stirring. Often you add flour or the like so that the protein separates from the fat. The yellowish, cooled fat has an oily consistency. It is kept in leather sacks or animal stomachs and can be kept for several years. It is drunk in butter tea and used for cooking.
