The cheese harp (also break Schneider) is a cutting tool , which in the production of cheese is used. With it, the thickened milk is broken up into a so-called break . The result is even cubes and thus an even cheese.

The cheese harp usually consists of a stainless steel frame in which up to 24 fine, parallel wires are stretched. The master cheese maker pulls the cheese harp through the thickened milk by hand, breaking it up. The smaller the parts, the better the whey can drain off later and the harder the cheese will be.
