A potato bread is generally a bread whose dough has been mixed with grated (raw, boiled or flaked ) potatoes . One example is the Riewekooche , a Siegerland bread specialty. Often nuts or fried onions are added to the potato bread to give the taste a rustic note.

Historical

The Reich Justice Office under Hermann Lisco commissioned an expert report via the Reich Office of the Interior in 1914

"[...] whether the replacement of the bread to be delivered according to the food regulations for the prisons of the judicial administration of March 31, 1908 [...] with potato bread can be recommended [...]"

and came to the conclusion that if 20% potato flakes were added, it could only be used with reservations for prisoner nutrition due to the reduced protein content - despite the palatability given.
