Makisu

A makisu ( Japanese 巻 き 簾 ) is a small mat that is used in the production of sushi .

This mat is about 30 by 30 centimeters and is used to roll up the filled nori sheets. You can use it to shape the sushi rolls either round or square. It consists of bamboo strips tied together with cotton cord, which should also only be cleaned with water and a brush and then dried. This mat completely underscores an entire nori sheet; smaller copies are available for making small sushi rolls from a small nori sheet.
