As flour maturity refers to the last maturity phase of a cereal grain . It ends in the dormancy of the mature grain.
During the flour ripening, nothing changes in the size or color of the grain, the grain is already firm, but the remaining sugar from the dough ripening is broken down into starch and the starch changes its texture (depending on the type of plant) .
