Culture and use

Patissons are annual and are therefore sown every year from seeds in the warm house or at the window and planted outside after the last frosts. The harvest takes place from June to September. The constant harvest of the young fruits stimulates the plant to produce new flowers and fruits.

Patissons are harvested “unripe” and are most tender and tasty when picked young. Patissons can be peeled and cut as vegetables, prepared or filled. They are often braised to give the unflavored vegetables more flavor. But they can also be steamed or boiled. In addition, they are pickled or preserved like cucumbers. For raw consumption, on the other hand, patissons are only partially suitable. Mini patissons are prepared whole. The flowers are also edible and can e.g. B. fried in batter or used for decoration.
