Petit Quercy

Petit Quercy is a French raw milk cheese made from goat milk . It takes its name from Quercy , the French region in which it is made. It is a light cheese that only matures for two weeks and is still on the market with an unripe core. The dough is soft and light. The natural mold bark is typically decorated with the leaves of the mulberry tree . The cheese wheel has a diameter of seven centimeters and a height of two centimeters. It is so-called Fermier cheese, in which the manufacturer only processes the milk from the animals that he keeps himself.
