Queijo do Pico

Pico is a Portuguese soft cheese , and comes from the Azores island of Pico , on which the highest mountain in the Azores, the Ponta do Pico , rises at 2351 m .

The pico has a soft consistency and a light yellow color. The round cheese loaf weighs between 650 and 800 grams and has a diameter of 18 centimeters and an edge height of three centimeters. The pico is obtained from the raw milk of cows. After the milk has thickened, the whey is allowed to drain off slowly. After salting, the cheese is aged for at least 15 days.

The Atlantic climate means that dairy farming with cows and cheese making is possible in the Azores and Madeira . On the Portuguese mainland, on the other hand, cheese is more often made from sheep or goat milk.

The pico has a slightly salty, but mild taste. Its fat content is 45% fat i. Tr.

Queijo do Pico is the protected designation of origin (PDO) for the cheese (Port. Queijo ) from Pico.
