The Redykołka is a Polish semi-fat and semi-solid cut cheese in the form of an animal, of a heart or a spindle.

Manufacturing

The sheep's milk cheese, cut with up to 40% cow's milk, is smoked for three to seven hours . Its fat content is at least 38% FiTr. with a 44% dry matter . It has been a product of protected origin since December 1st, 2009 .

origin

The cheese, first mentioned in 1416, takes its name from the drive ("redykanie") of the sheep herds, where it was distributed free of charge. The first prescription for production dates from 1748.

To this day it is given as a gift on various occasions.
