Shibumi ( Japanese 渋 み , German "1. bitter taste, astringent, 2. subtle taste, simple elegance") for the bitter note from the catechins , while

Umami ( Japanese 旨 み , dt. "Good taste") describes the typical green tea sweetness, which is primarily caused by theanine .

Umami (旨 み) in this sense should not be confused with umami chōmiryō (旨 み 調味 料), which translated means “flavor enhancer”.
