Bacon thicknesses are a kind of pancake . As a local specialty of regional cuisine , they are particularly eaten in southwestern East Friesland and Groningen between Christmas and New Year's Eve.

Depending on the recipe (region), bacon thicknesses are made from different proportions of a special flour mixture (rye flour and wheat meal) or from buckwheat flour (classic original recipe), dark and / or light (beet) syrup, sugar, salt, butter or lard, eggs, Milk, aniseed and cardamom prepared. Raisins can also be added. The thick bacon flour mixture is also available ready-made from specialized retailers.

Traditionally, New Year's Eve is usually baked all day long with the thick bacon stock, in order to then eat the fresh, still warm bacon for lunch or to celebrate New Year's Eve with family and neighbors. In the following days, the rest is eaten cold.
