Styrian fried chicken
The Styrian fried chicken is a classic of Styrian cuisine and is traditionally prepared with Sulmtaler chicken.
A chicken is rinsed, dried, divided into several pieces and skinned if necessary. The chicken pieces are seasoned with salt, turned in flour, pulled through whisked eggs and then turned in breadcrumbs . The breaded pieces are either baked until golden brown in hot oil or placed on a baking sheet, drizzled with oil and baked in the oven. Then drain the fried chicken and serve - garnished with lemon wedges. Typical side dishes are Vogerl salad and potato salad , prepared with Styrian pumpkin seed oil , or parsley potatoes .
The Styrian fried chicken salad is prepared in the same way , with the difference that the chicken pieces are cut a little smaller.
