Chopping knives are special knives for fine chopping (" weighing ") cooking ingredients. They consist of a curved blade (or two parallel blades) about 15 to 20 centimeters long with vertical handles at both ends. A chopping knife is held with both hands and the ingredients are chopped up on a board with rocking movements. Chopping knives are mostly only used for chopping herbs and the like, otherwise they have largely been displaced in the household by machines such as meat grinders , hand blenders or universal kitchen machines .

Very large chopping knives that are operated by two people are called cradles . The cutter has taken its place .

In artistic gravure printing , a serrated chopping knife is used to roughen the surface of the plate for the production of a mezzotint .
