Zymoscope

A zymoscope (from the Greek ξὐμη : sourdough; σκοπεῖν : to look at) is an instrument that can be used to determine the effect of a certain yeast during fermentation. It measures the volume of carbon dioxide released from a certain amount of sugar . It consists of a water-filled tube with a piston that is lifted by the carbon dioxide. An externally attached scale enables the volume of carbon dioxide generated to be read off.
