The Bautz'ner Mustard & Food Ltd. is a food company in Bautzen by Develey Senf & Feinkost . The most important product is Bautz'ner mustard . This mustard is one of the most famous East German products. The Bautz'ner brand had belonged to the Develey Holding GmbH & Co. Beteiligungs KG (Develey Senf & Feinkost from Unterhaching in Bavaria ) group since 1992 , but production continued to take place in the factory in Kleinwelka . Since February 1st, 2008, Bautz'ner is again a limited liability company. The managing director is Stefan Durach, who is also managing director of Develey Holding GmbH.

The tradition of mustard production in Bautzen began with a company founded in Bautzen in 1866. From 1953, among other things, medium- spicy mustard was produced in the VEB Essig- und Senffabrik Bautzen , later renamed VEB Lebensmittelbetrieb Bautzen , and sold under the Bautzener Senf brand . This became by far the most popular mustard in the GDR .

In the 1970s the company moved from downtown Bautz to Kleinwelka.

With the turnaround in the GDR in 1989/90, the future of Bautzen mustard also became uncertain, although consumers - in contrast to many other Eastern products - continued to loyal to it (albeit to a lesser extent) during the upheaval. The traditional company Develey Senf & Feinkost from Unterhaching in Bavaria bought the Bautzen plant from the Treuhandanstalt in 1992 and invested in a new mustard and delicatessen factory in Bautzen. The new beginning took place under the new Bautz'ner umbrella brand .

Since March 2008 there has been a mustard museum at the meat market in Bautzen with exhibits such as historical mustard cans, old cruets and rare cookbooks on the topic of mustard, as well as a mustard counter where unusual types of mustard can be sampled.

The most important product is still the mustard Bautz'ner Mittelscharf with 90 percent production share. Almost 36 million cups are sold each year. Typical is a light horseradish taste , which has its origin in the allyl mustard oil that is released when the crushed mustard seeds are mashed in. The typical color is not created by adding the otherwise common turmeric root, but by the fine grinding of the mustard seeds.

A third of the 3,000 tons of mustard seeds used per year comes from Upper Lusatia and Mecklenburg-Western Pomerania. B. from Canada. The vinegar required is produced in-house.

Before 1989, over 200 employees worked in the Bautzen food company . Today there are 50 employees. The plant in Bautzen delivers a total of 15,000 tons of mustard annually.

The Bautz'ner mustard production is extremely successful. In East Germany, mustard is the absolute market leader with 70 percent. In Germany as a whole, Bautz'ner is ahead of its national competitor Thomy with a market share of 23 percent , making it the German market leader. In addition to various mustard products, the product range now also includes related delicatessen items. Cucumbers, canned food, sauces, ketchup and salad dressings are made by other Develey factories.
