Mutabbal

Mutabbal ( Arabic متبل, DMG mutabbal ) is an aubergine puree that belongs to the traditional mezze and therefore belongs to the Arabic cuisine .

There are different ways of making Mutabbal. In addition to aubergines , however, the use of garlic , tahini and lemon juice and sometimes yoghurt is typical . The aubergines are soft-cooked in an oven to make the dish. However, in many traditional Levant households , they are also grilled over a charcoal fire until the meat is cooked through. This way the mutabbal has a smokier taste.

Traditionally, Mutabbal is served on a flat plate and a shallow hollow is pressed into the puree. It is then drizzled with olive oil and sprinkled with parsley.

A similar or identical dish is Baba Ghanoush .
