More-or-less a filling for other salads or as a sandwich filling, chicken salad is a wonderful way to use-up leftover chicken. Diced chicken, dark or white meat, or a combonation of both, are mixed together with diced onions, diced celery, and moistened with mayonaise and/or mustard, with other seasonings added to taste.
