Melting away

Melting off (peeling off, Austrian peeling off ) is the process of shining over or swiveling food that has already been cooked, such as vegetables or noodles , in cooking fat or butter .

The term melting is derived from lard , which until the last century was the main fat present and most used in kitchens. Melting off serves to improve the taste, the appetizing appearance, increases the nutritional value of the food and helps to develop fat-soluble vitamins . Panning in hot fat was also a way of heating pre-cooked and cooled side dishes.
