Anna cake

Annatorte is a chocolate cake named after Anna Demel, the sister-in-law of Carl Demel (junior) and long-time director of Cafe Demel in Vienna, and is still made in the former KuK Hofzuckerbäckerei Demel today.

It is a chocolate or truffle cake made of three biscuit - like, fatty base layers with a dark Parisian cream (chocolate buttercream ) in between, orange liqueur and a nougat topping . The nougat cools to a thin layer on a cold marble slab, which is then arranged in a circle as large waves to decorate the cake.
