Archi (spirit)

Archi ( Mongolian архи ), often written as arkhi , is a Mongolian milk schnapps that is mainly made from yak milk . The primary products of Archi are various milk drinks such as Choormog that are slightly alcoholic due to yeast fermentation . The production of Archi is complex. If it is made from Choormog, then the production begins with the production of a yoghurt, either from the raw yak milk or from the skimmed milk that is obtained from the Öröm production. Yeast is added to this yoghurt, which is called tarag, and then left to rest for several days at a temperature that is not too cool. The finished Choormog contains 20 to 25 grams of lactic acid per liter and up to 2.5% alcohol. The Archi is obtained from this through closed or open distillation.
