Choormog

Choormog ( Mongolian хоормог ), often also transcribed as khormog or khoormog , is a slightly alcoholic milk drink that is mainly made from yak milk in Mongolia .

The starting product of Choormog is Tarag , a yoghurt-like, thick and homogeneous milk product with a sour taste. It is made either from raw milk or from skimmed milk. Skimmed milk is obtained in particular in the production of Öröm . The milk is activated by an acid alarm and is then curdled after two to four hours.

Yeast is added to the finished tarag and stored in a place not too cool. The resulting carbonic acid creates foam. The finished Choormog has a piquant sour and alcoholic taste. It contains 20 to 25 grams of lactic acid per liter and up to 2.5 percent alcohol.
