Aburaage
Aburaage ( Japanese 油 揚 げ , "fried in oil") is a product based on soybeans in Japanese cuisine , in which tofu is usually deep-fried in thin slices.
It is used in udon noodle dishes (also kitsune-udon from kitsune - according to Japanese legends, foxes liked the deep-fried tofu) and as a casing for inari-zushi . Fillings with natto are also popular. There are also different types of fried tofu, known as atsuage ( 厚 揚 げ , "thick fried food") or namaage ( 生 揚 げ , "raw fried food").
