The oyster omelette is a dish well known in Taiwan , China , Singapore and many other Asian countries. The main ingredients of the oyster omelet are fresh oysters, eggs, prawns and vegetables. What is special is that the base is not only made from eggs, but also from a mixture of water and sweet potatoes. Anping oyster omelet is one of the famous snacks from the Taiwanese city of Tainan .

preparation

First you heat the oil in the pan, then you add the oysters, egg mixture and corolla (spinach, Chinese mustard cabbage, water spinach, bean sprouts, or basil). After a few minutes, pour in the sweet potato starch. When the oysters are well done, the omelette is placed on a plate and the sauce is poured over it.

origin

The oyster omelette has lost its origin in the mists of antiquity. There are many versions about the origin of the omelette.

One version is that the oyster omelette comes from the Minnan area (Xiazhou, Zhangzhou, Quanzhou). In this area the people speak Minnan. Many of the people there were poor and food was very scarce for everyone. The people on the coast prepared this food because of the famine. The ancestors invented this as a substitute for the staple rice. That is why the oyster omelette is a symbol of need. You can find the oyster omelet in Minnan, Chaoshan, and Taiwan. This is a traditional dish that all ancestors in Tainan Anping knew.

Another version reads: In 1661 the Dutch army forcibly occupied Anping. A Ming Dynasty general , Zheng Chenggong , dispatched the troops from Lu Ermen (Lu Ermen is a port in Tainan Anping) and attacked the Dutch army. The Dutch army was defeated, and they hid the food to starve Zheng Chenggong's troops. Zheng Cheng-gong's army took the oysters on site and mixed the eggs and potato starch to fry them.
