Baker's itch , also known as baker's itch , is a skin disease caused by hypersensitivity to flour or flour additives, for example ammonium persulfate . The itchy symptoms that occur on the hands and forearms are notifiable as an occupational disease and are subject to compensation.

The name baker's scabies is misleading here, as the disease is not triggered by mites , so it is not a variant of the parasitic scabies .
