Beef marbling standard

Beef Marbling Standard is an international scale from Japan for the evaluation of beef. It rates the marbling of the meat in twelve levels. The meat is assessed on the 12th and 13th rib. While commercial cattle breeds reach levels 2–3, the Japanese Wagyū is level 6–9.

Other evaluation criteria are meat color, fat color / quality and meat firmness.
