Bleu des Causses

The Bleu des Causses is a French blue cheese . It is made from cow's milk and is therefore a milder version of Roquefort .

The cheese falls under the Appellation d'Origine Contrôlée , which ensures the quality requirements for the cheese and defines the production conditions. Similar to Roquefort, the cheese matures in fleurines , crevice-rich rock caves in which there is constant air circulation. It is stipulated that the cheese must mature for at least 70 days. As a rule, it goes on sale after a maturation period of three to six months.

If the Bleu des Causses is the end of a meal, it is served with a sweet and at the same time acidic wine.
