Bolinhos de Bacalhau

Bolinhos de Bacalhau or Pastéis de Bacalhau ("cod cakes") are typical Portuguese appetizers (petiscos), small fried balls made from potatoes and bacalhau ( clipfish ).

For preparation, Bacalhau is first watered, boiled, freed from the skin and bones and ground. A roughly equal amount of jacket potatoes is peeled and mashed. Both are mixed together with the addition of eggs and seasoned with salt, pepper, nutmeg , onions and flat-leaf parsley. From this farce small balls are formed with two tablespoons and fried in olive oil . Bolinhos de Bacalhau are served warm or cold with an aperitif .
