Bombage

from Wikipedia, the free encyclopedia

A bombage describes the inflation of cans . It occurs when the contents develop gases from fermentation or putrefaction, which increase the pressure inside. This can be a sign of a spoiled content, but is sometimes also due to the deliberate secondary fermentation, such as with surstromming . A distinction must be made between chemical (e.g. due to the effect of acid on the can metal) and physical bombage (due to the effect of heat or pressure) from this biological bombage.
