Bonchester

The Bonchester is a modern, unpasteurized soft white cow's milk cheese from Scotland . It has a round shape and a soft white rind. It was invented by John and Christian Curtis on their own farm. The cows are only milked from March to December. This milk gives it its deep butter-yellow color and its velvety structure. If you cut it “under age”, the quarky mass is chalk white. It will take a few weeks for the consistency to soften and reach a custard-like consistency. The color becomes more intense and the taste is rounded off. The rind tastes a bit like mushrooms and the inside has a fresh, grassy taste. The cheese matures in four to eight weeks and contains around 48% fat.

Bonchester has already won the bronze medal at the British Cheese Awards and was the winner of the Royal Highland Show .
