Meat strudel
The sausage strudel known in Swabia consist of a rolled-up pancake with a filling of sausage meat .
The Brätstrudel is particularly widespread in Augsburg, which is why it is often referred to as the Augsburger Brätstrudel . The main ingredients of the filling are sausage meat, egg and a little flour . It is seasoned with salt , pepper and nutmeg . This batter is spread on the pancake and rolled up into a strudel . Cut into pieces, it is served in broth as a strudel soup, or cooked in the oven with other ingredients.
