Brandade de Morue

The brandade or Brandada is primarily in the northwestern Mediterranean coast ( Liguria , Provence , Languedoc-Roussillon , Catalonia , Valencia and the Balearic Islands ) spread mashed food ( mousse ) from fish and other ingredients (potatoes, vegetables, olive oil). But it is also sometimes offered in urban specialty restaurants in the hinterland. The best known is the brandade de Morue , a specialty from Nîmes - a puree made from stockfish or clipfish . Similar dishes are served in Portugal and on the northern Spanish Biscay coast.

Brandade is also sold ready-made in cans, especially in France.
