Carnixulla

The Carnixulla (Catalan: Carnixua ), also under the Menorcan name carn i Xullo known one of the oldest sausage specialties of the Balearic island of Menorca . Their origins go back to the time of the Roman Empire .

A number of traditional recipes are used in production, which were passed on from father to son: Only their use determines and guarantees authenticity. Carnixulla is a coarse boiled sausage made from lean pork and bacon, seasoned with salt, caraway seeds and other local spices. The meat mass is filled into natural casings.

In addition to the well-known Menorcan sobrasada , the traditional carn i xullo is a sausage specialty that is still produced on the island of Menorca on a small scale, both at home slaughter and in the butcher's trade. In numerous small bars it is served as a bratwurst with sweet potatoes, mainly during the porquetjades (pork slaughter festival ).
