Chłodnik is an iced cream soup of Polish origin, known in several Slavic countries, the name of which means refreshment . The soup is pink in color, due to the beetroot and the sour cream. Chłodnik is usually prepared in the crab season.

The soup is made from sorrel , beetroot, cucumber puree, water, vinegar and a little sugar, usually bound with wheat semolina, seasoned with fennel and tarragon, then cooled. Various ingredients are used as garnish, such as hard-boiled eggs, crayfish tails, dill, cubes of fresh cucumber and other vegetables such as spring onions, radishes or lemon wedges.
