Chatting

Chatting (French: châtrer = castrate) is the pulling out of the intestines from living shellfish before frying. This is common practice in France because of the supposedly better taste. In Germany this violates the Animal Welfare Act . Shellfish must be killed in bubbly boiling water before consumption.
