Chow-chow (relish)

Chow chow

Chow-chow is a relish developed in the south of the USA from pickled vegetables, mostly green tomatoes, cabbage or cucumber, onions, cauliflower or asparagus, carrots and beans. The ingredients are seasoned with salt and mustard and preserved in vinegar, then usually stored in cans. Chow-chow is served cool with main courses. It is believed to have established itself under this name in the mid-19th century.
