Demoul

Demoulieren is a French kitchen word ( démouler 'to take out of shape') and is also referred to in German as to fall . It means turning a cooked or jellied dish out of a mold or container by turning it upside down . Today the term is only used in specialist circles.

In the production of French herbal veal liver sausage, the term demouling describes the folding in of the veal liver in the liver sausage meat. Presumably this is intended to illustrate the significant change in the taste of the sausage meat.
