In the kitchen language, revealing is understood as the jerky pulling of the mussel beard from the shell body . The mussel beard with which the mussel attaches itself to the ground is considered inedible in fine cuisine. The peeling of the beard always starts at the wider end.

The removal of the viscera, which is often called a "beard" in traditional cuisine and which is the basic ingredient in many popular dishes, is often referred to as deboning .
